1 lb butter
3 C sugar
4 eggs
1 TBSP Mexican Vanilla
1/2 tsp salt (omit if using salted butter)
2 tsp almond flavoring
6 1/2 c all purpose flour

Directions:
Directions:
Let butter soften on the counter until it is just soft enough to leave an indent with your finger. Cream butter and sugar in mixer until the butter-sugar mixture turns white (about 10 minutes)
Add eggs, flavorings and salt in separate bowl and pour into the mixer one egg at a time until well incorporated.
Stir in flour one cup at a time. (Add 3 cups by mixer and knead the other 3 1/2 cups by hand). Once all flour is incorporated divide in half. 1/2 will yield about 2 dozen cookies. If you are not baking right away. Wrap in saran wrap and place in refrigerator for up to 1 week or in the freezer for 3 months.

Bake at 350º for 9-11 minutes.
