2 sticks of cool butter
1 1/2 c confectioners sugar
1 egg
2 tsp vanilla
3 cups all purpose flour
1 tsp baking powder

Directions:
In bowl of stand mixer, using the paddle attachment beat butter on low just until it's broke apart and no longer in large chunks. We're not aiming for smooth or creamy here. Sift the confectioners sugar over the bowl, and beat again on low-medium until combined. Sometimes cool butter will stick to the paddle so I turn the mixer to high to "throw" it off. Add egg and vanilla and beat on low-medium just until combined and chunks are gone for the most part. Sift flour and baking powder into the bowl. Beat on low to incorporate all of the dry ingredients then medium -high until all of the dough has gathered together onto the paddle. Use a spatula to gather all the dough and place on a plate to rest for 5-10 minutes. Knead the dough by hand for a few moments until it's nice and smooth. (this is the key) the dough should not stick to your fingers when you push in to it. If it does knead in a little extra flour. You can roll now or chill for a bit or even freeze for a few weeks if needed.
