⅓ c. peeled, mashed, cold, potatoes
1tbs. milk
1 tsp. vanilla
⅛ tsp. salt
6-7 c. powdered sugar
⅓ c. creamy peanut butter

Directions:
Directions:
1. Beat mashed potatoes, milk, vanilla, and salt together.
2. Add 6 cups on powdered sugar, 1 cup at a time and mix to form dough.
3. Gather dough into a ball and dust with powdered sugar. Roll to ⅛ inch thick on parchment paper. Cut into 12x10 rectangle. Cover with powdered sugar. Flip onto second parchment paper and take off top. Spread peanut butter over the top. Roll ininto a jellyroll shape. Wrap in parchment and freeze one hour.
4. Cut and serve in " slices. Refrigerate up to one week.
