3 eggs
1 C milk
1 C cottage cheese, drained
1 1/2 C flour
1 tsp. baking powder
1/2 tsp salt
5 T sugar
1 tsp vanilla extract
Oil for frying

Directions:
Directions:
Place all ingredients together in a large bowl, besides oil. Mix until smooth.
Heat 1/2 C oil in skillet. Using a large spoon, drop the batter into hot oil.
Fry 2 to 3 minutes on each side, until lightly browned. Continue until batter is used up, adding oil when necessary.

They can also be made in a sandwich maker- for bite size triangle shaped ones
If doing in sandwich maker- spray with Pam between each batch
