onion, chopped
cup green pepper, chopped
1 clove garlic, minced
1 tbsp. cooking oil
1 - 28oz. can tomato, cut up
2 cups long grain rice
1 tsp. sugar
1 tsp. chili powder
⅛ tsp. pepper
1 cup water
several dashes tobasco sauce
cup cheddar cheese, shredded (optional)
Chicken, cooked (optional)

Cook onion, green pepper and garlic in oil till tender but not brown. Stir in undrained tomatoes, rice, sugar, chili powder, pepper, tobasco sauce and water. Bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or till rice is tender and nearly all liquid is absorbed. Sprinkle with cheddar cheese and chicken.
