2 tbls butter
2 cup sliced leeks
6 cup diced asparagus
1 qt chicken broth
1 cup light cream
2 tbls grated parmesan cheese
1/4 tsp white pepper
Salt
Nutmeg


Directions:
Directions:

Melt butter in large soup pot, saute leeks until they are limp 3-5 min,

Add asparagu and chicken broth

Simmeruntil asparagus is tender 10-15 min

Cool soup slightly, puree in blender and reheat

Add cream,salt and nutmeg to taste

May substitue onions for leeks, just ease back the amount

I use hand blender and just bend partially leave bits of asparagus
