Flour (seasoned with salt and pepper)
2 eggs beaten with a little water
saltine cracker crumbs
oil for frying
zucchini, slice about ¼" thin

Directions:
Directions:
Heat oil to 350º in a frying pan or electric skillet. Dip zucchini slices in flour, then egg, then cracker crumbs. Fry in oil until golden brown, flipping once to cook the other side. Put on a paper towel lined cookie sheet to drain. Sprinkle with salt.

To make puffs:
Mix together some flour, the egg mixture and some cracker crumbs until a think paste or dough forms. Drop by teaspoonfuls into the oil and cook until browned. Let drain on paper towels and sprinkle with salt.
