8 Tbsps finely chopped onion
8 Tbsps bacon drippings
18 Tbsps mayo ( approx 1 cup)
8 Tbsps vinegar
6 Tbsps white sugar

Directions:
Directions:
Heat bacon drippings and sauté onions until transparent.
Let cool.
Add mayo, sugar and vinegar.
You may have to add a little more sugar or vinegar to get the sweet and sour taste.

Arrange spinach, chopped boiled egg, grated mozzarella cheese, bacon bits, thin sliced white onion in bowl. Pour warm dressing over and mix.
