1/2 cup unblanched almonds
1/2 cup granulated sugar
1 orange
1 lemon
1/2 cup cold butter
1 tbs concentrated orange juice
1 tsp vanilla
1/4 tsp salt
1 egg
1 1/2 cups all purpose flour

Directions:
Directions:
Measure almonds and sugar into a food processor fitted with a metal blade. Finely grate peel from both orange and lemon and add to processor. Whirl mixture. Add butter, juice, vanilla, egg, and salt and slowly add flour. Take handful of dough and place on centre of sheet of waxed paper. Roll paper around dough and shape into log about 1 1/2 x 6 inches long. Twist ends of waxed paper to seal. Repeat with remaining dough. Refrigerate for at least 2 hours or up to 3 days. Or wrap in foil and freeze for up to 2 months.

When ready to bake, preheat oven to 375º. Grease cookie sheets. Slice logs into rounds about 1/4 inch thick. Place rounds, 1 1/2 inches apart, on sheets. Bake until browned, about 7 minutes. Let cookies cool for 1 minute before placing on a rack. Store cookies in an airtight container at room temperature for up to 4 days. Then refrigerate or freeze.
