2 cups green beans cut into 2 inch pieces
4 unpeeled red skinned potatoes
1/4 cup water
3 tbsp olive oil
1 tbsp red wine vinegar
2 anchovy fillets, finely chopped (optional|)
1 tsp dried basil
pinch of salt and freshly ground pepper
1/4 cup black olives, sliced

Place beans in 3L (12 cup) microwave safe casserole dish. Slice potatoes into 1/4 inch thick rounds. Add to beans along with water. Stir until mixed. Microwave, covered on high for 6-8 minutes or until potatoes are barely tender. Stir partway through cooking. Meanwhile, whisk remaining ingredients except olives together. Then drain cooked vegetables well. Toss with oil mixture and olives. Serve immediately or refrigerate until cooled to room temperature.
