Thai Beef Salad Recipe

Dressing-1/4 cup water
2 T sugar
1 clove, minced garlic
2 tbsp fish sauce
3 tbsp fresh lime juice
1 tsp sambal oelek

1 lb steak, seasoned and grilled to medium rare, sliced thin
1 cucumber, peeled, halved and sliced thin
1/4 cup small red onion, Thai style
1 cup Mung bean sprouts
1/2 cup shredded mint leaves
2 tbsp salted dry roasted peanuts, chopped
Romaine or other lettuce

Season and grill steaks. Rest and slice thin.
In a small saucepan, heat the water with the sugar, stirring until dissolved. Pour into a glass jar and add garlic, fish sauce, lime juice and sambal. Let cool.
Prepare salad. Add dressing and meat when ready to serve. Sprinkle with peanuts and serve with lime wedges.
