2 gallons whole milk (raw works best)
1 cup flour
1 rennet tablet

The custard
5 eggs
2 cups sugar
3 cups cream

Top with margarine

Directions:

Dissolve rennet tablet in 1 Tbsp warm water
Heat milk slightly
Mix small amount of milk with flour to make paste of pouring consistency
Stir this into the rest of the milk and add dissolved rennet
Stir
Cover and let set away from drafts in warm place for about 30 min.
Cut crisscross cuts with knife
Let stand another 30 min.
Start cutting and draining off whey.
Do about every 15 min. until all whey is gone

In large bowl combine eggs, cream and sugar
Beat all together and the curds; fold together by hand breaking up all chunks of curds

Pour into baking dish and dot with margarine
Bake at 350 for 2 to 2-1/2 hours
Insert knife to test for doneness

Serve with lingon berries and whipped cream

I had to look this up as never heard of it. It’s sort of a cheesecake, sort of custard. Really looks delicious.
Here’s the story....this recipes (and others) are from Bill and Gary (Don and Gloria Feldman’s sons) that they found while working on getting the house ready for sale. They were faded, old and taped to the back of a cupboard door, so must have been used often.
The house belonged to Ira and Ruth prior to Don and Gloria. Same house, same cupboards.
