Grham Cracker Pie Recipe

Ingredients: Crust
20 graham crackers ¼ cup sugar 1 stick butter - softened 1 tablesppon water
Filling
Vaniila pudding mix NOT INSTANT (Either two small packages or 1 large one) 3 egg yolks 3 cups of milk
Meringue
3 egg whites ½ teaspoon vanilla ¼ teaspoon cream of tartar 6 tablespoons sugar

Directions:Crust
Roll crackers very fine, sitr in sugar and gradually add the softened butter. Mix thouroughly and stir in water. Press into bottom and sides of a pie plate and bake in a moderately slow over. (325ºF) for about 10 minutes. Cool before adding filling.
Filling
Follow pudding mix directions for cooking - but use 3 egg yolks and 3 cups of milk . (Start prepping meringue while pudding is heating) Pour filling into pie crust.
Meringue
Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar - beating until stiff and glossy and peaks are firm and all sugar is dissolved. Spread meringue over HOT filling, spreading to the edge of the pastry. Bake at 350ºF for 12-15 minutes or until meringue is golden. Cool completely before serving.
*Note - Before cutting, dip knife in water to get a smooth slice.
