3 LBS. Sweet Potatoes
1 C. packed brown sugar
4 tsp. corn starch
tsp. salt
⅛ tsp. cinnamon
tsp. vanilla
1 C. apricot nectar
C. hot water
2 T. butter
C. chopped pecans (optional)

Directions:
Directions:
Peel sweet potatoes. Boil until tender and cut into slices or chunks. Place in 2 Qt. buttered casserole dish.
Combine brown sugar, cornstarch, salt, cinnamon in saucepan. Add vanilla, apricot nectar and water. Cook over medium heat, stirring constantly until thick and bubbly. Stir in butter and pecans. Pour over sweet potatoes.

Bake, covered for 25 mins. @ 350 degrees.
