2 cups strained pumpkin
1 cup brown sugar
1/2 tsp. salt
1/2 tsp. ginger
1 tsp cinnamon
1/2 tsp nutmeg
3 slightly beaten eggs
2 cups milk
1/2 cup cream or evaporated milk (I use evaporated milk)

Directions:

Mix pumpkin, sugar and spices thoroughly.

Add eggs, milk and cream.

Pour into 1 large or 2 small pie shells which have been baked slightly to prevent soaking.

Bake in hot oven (450 F) for 10 minutes.

Reduce heat to 325 F. (or moderate oven) and continue baking for 35-40 minutes or until done.
