Salmon fillet
Olive oil
Salt
Pepper

Directions:
Directions:
Place a cast-iron skillet in a cold oven and preheat to 450º.

Brush a 1 1/2 pound salmon fillet with 1 tablespoon olive oil and season with salt and pepper.

Place skin side down in the hot skillet.

Bake until a thermometer reads 125º, 14-18 minutes.

Cut into four pieces for serving.
