1 cup cashews
1 tbsp butter
1 lb sugar snap peas or snow peas
pinch of salt and freshly ground black pepper

Directions:
Directions:
Place cashews in wide shallow microwave safe dish such as a pie plate. Microwave uncovered on high for 3 minutes or until slightly toasted. Stir occasionally. Remove cashews. Add butter and peas to pan. Microwave covered on high for 2- 3 minutes or until peas are tender. Stir twice during cooking. Toss with cashews. Add salt and pepper to taste.
