1 tsp olive oil
1 onoin chopped
1 garlic clove, crushed
28 oz can tomatoes
10 oz can undiluted chicken broth or vegetable broth
finely grated peel and juice of 1 orange
1 tsp ground cumin
1 tsp ground sugar
pinch pepper
1 cup crumbled feta

Directions:
Directions:
Place oil, onion and garlic in a 3L (12 cup) microwave safe bowl. Microwave uncovered on high for 1 minute until onion is soft. Add remaining ingredients except feta. Break up tomatoes using a fork.l | Microwave covered on high for 5 minutes to heat and blend favors. Turn into a food processor and puree until fairly smooth. Sprinkle with feta.
