5 large red onions (about 3 lbs)
4 tbs butter
salt and pepper
3/4 cup red wine
5 cups chicken or vegetable stock
3/4 tsp dried thyme
French Bread (4 slices)
1/3 cup grated swiss cheese
1 tbs chopped fresh parsley

Directions:
Directions:
Slice onions. Melt 3 tbs of the butter in a large pan. Add onions and 1 tsp salt and cook over medium low heat. Stir occasionally until golden. 30 to 40 minutes. Add wine and cook 5 minutes. Add stock and thyme and cook 15 minutes. Add stock and thyme and cook 15 minutes. Season to taste with salt and pepper. Heat oven to 350º. Butter bread on both sides using the remaining 1 tbs butter. Put on a baking sheet and sprinkle with cheese. Bake until golden about 10 minutes. Add parsley to soup, ladle into bowls and top with cheese toast.
