2 broiler fryers (about 3 lbs each - cut up)
1 cup light cream
2 cps flour
3 1/2 tsp salt
1/2 tsp pepper
1 tsp paprika
1 tsp poultry seasoning
vegetable oil or shortening

Directions:
Place chicken pieces in large shallow dish. Pour cream over top. Turn chicken to coat. Cover and refrigerate several hours.

Combine flour, salt, pepper, paprika and poultry seasoning in plastic bag. Add chicken pieces a few at a time and shake to coat well. Dip each again in remaining cream. Shake again in flour mixture.

Pour enough vegetable oil or melt enough shortening in large heavy saucepan or Dutch oven to make a depth of 2 inches. Heat to 350º on a deep fat frying thermometer.

Fry chicken pieces a few at a time, turning once. Fry breast, leg and thighs about 18 to 20 minutes and wings about 12 minutes, or until crisp and tender. Remove to paper towel to drain. Serve at room temperature or cold. Garnish with carrot curls, radish roses and parsley.
