36 wonton skins
⅔ cup thick 'n chunky salsa, your favorite
¼ cup chopped fresh cilantro
½ tsp ground cumin
½ tsp chili powder
1 can (15.25 oz) whole kernel sweet corn, drained
1 can (15 oz) black beans, rinsed, drained
½ cup sour cream
cilantro sprigs, to garnish if desired

Preheat oven to 350º F. Gently fit 1 wonton skin into each of 36 small muffin cups, (mini-muffin tin),
pressing against bottom and sides. Bake 8 - 10 minutes or until light golden brown. Remove from
pan and cool on wire rack about 5 minutes.
Meanwhile in a medium bowl, mix remaining ingredients except sour cream and cilantro sprigs.
Just before serving, spoon bean mixture into wonton cups. Top each cup with ½ tsp or more with
sour cream and garnish with a small sprig of cilantro. Can also add a small cube of meat if you like.

These are one of our favorites that end up being a meal, can't eat just one.
