2 tbsp onion chopped
1/4 cp celery finely chopped
2 cans whole mushrooms
1/4 cp butter
salt and pepper to taste
1 tbsp lemon juice
1/2 cp toasted almonds, chopped
4 whole chicken breasts (boned)
1/4 cup melted butter
1 cp bread or potato chip crumbs
4 bacon strips halved

Preheat oven to 350º.

Use whole (double) chicken breasts. Saute onion, celery and mushrooms in butter for about 5 minutes. Add seasonings, lemon juice and almonds. Divide stuffing into equal portions and spoon into chicken breast. Fold edges of meat and skin over the filling and secure with skewers. Roll in melted butter then in crumbs. Place the rolls skewer side down in pan and cover with bacon strips. Bake until tender and golden brown - about 50 minutes.
