4 medium potatoes
6 tablespoons good quality olive oil
2 large onions chopped fine
1 clove garlic, minced
1 tbsp butter
salt and pepper to taste
1 tsp caraway seed
3 slices bacon, fried crisp and crumbled (may be left out for vegetarian recipe)

Directions:
Directions:
Peel potatoes and cut into thin 1/4 inch slices. Pat dry with paper towels.
Heat olive oil in large skillet. Add potatoes and brown on both sides over high heat, stirring frequently. Add chopped onion and garlic; saute over medium heat for about 20 minutes or until potatoes are tender. Season to taste. Sprinkle with caraway seed. Add crumbled bacon and heat through. Serve immediately.
