1 cup choux pastry (see recipe under miscellaneous)
2 cups warm mashed potatoes
1 tsp salt
1 tbsp butter, melted

Directions:
Make the choux pastry and set aside.

Preheat oven to 425º. Combine warm mashed potatoes, salt and choux pastry. Mix well.

Spoon or pipe mixture into decorative, individual servings on a greased baking sheet. Servings may be shaped into nests, each having about 1/2 inch of potato mixture on the bottom. The sides should be 1 1/2 to 2 inches high.

Place on middle rack of oven and immediately reduce heat to 375º. Bake for 20-25 minutes. Brush with melted butter before serving.

NOTE: This same mixture may be shaped into balls and deep fried. Heat oil in deep fryer to 350º. Using 2 teaspoons, form mixture into small balls. Drop into hot fat. Allow enough room for potatoes to puff up. Cook about 3 minutes. Temperature should be increased to 380º and the balls allowed to continue cooking until golden brown.
