1 cup water
1/2 cup butter
1/4 tsp salt
1 cp all purpose flour
4 eggs

FILLING

1 3 oz pkg vanilla instant pudding and pie filling
1 cup milk
3 tbs orange juice
1 tbs orange flavored liqueur (or replace by increasing orange juice to 1/4 cup)
1 cup heavy cream
3 large oranges

GLAZE

3/4 cup confectioners' sugar
1 tbs orange juice

Preheat oven to 400º. To prepare eclairs, in 2 quart saucepan, heat water, butter, and salt until mixture comes to a boil. Add flour all at once and stir vigorously over low heat for 1 minute until mixture leaves side of pan and forms a ball. Remove from heat and cool slightly. Add eggs, one at a time, beating well after each addition until mixture is shiny and smooth.

On ungreased baking sheet, using a scant 1/4 cp dough for each eclair, shape into 4 x 1" fingers. Bake 30-35 minutes until shells are puffed and golden. Cool slightly. Slice off a small horizontal portion of each eclair top, and reserve. Remove any soft dough from shells and cool completely.

To prepare filling, prepare pudding according to package directions using the 1 cup milk, orange juice and liqueur. Cool completely.

In chilled medium bowl, with chilled beaters, beat cream until stiff peaks form. Fold into cooled pudding. Peel and section oranges then cut into bite size pieces. Fold into pudding just before serving. To prepare glaze in small bowl, combine confectioners' sugar and orange juice, stir until smooth.

To assemble, fill eclair shells with orange filling and cover with reserved eclair tops. Drizzle the orange glaze over the tops.
