2 cups cooked salmon, fresh or canned
Salt and pepper
½ cup soft bread crumbs
2 Tbsp. grated onion
1 Tbsp. butter, melted
1 Tbsp. lemon juice

Directions:
Beat together one egg and ½ cup milk.
To prepare this Salmon Puffs Recipe, first remove the skin and bones from the salmon, chop the meat fine, and add salt, white pepper or paprika, soft bread crumbs, lemon juice and well beaten eggs. Mix thoroughly, and pack in six or eight oiled cups, filing the cups evenly. Set the cups at once in a pan containing hot water that comes to about an inch below their tops, and bake for 45 minutes at 350ºF. Unmold on a hot platter, thrust a sprig of parsley or celery, or a clove, into the center of each puff.
