10 Granny Smith Apples
10 Popsicle or craft sticks

HOMEMADE CARAMEL:
1 cup butter
2 cups sugar
1 ½ cup corn syrup
2 cups heavy cream
1 tsp vanilla

OPTIONAL TOPPINGS:

Chocolate chips, Cookie crumbs, Sprinkles, Mini M&Ms, Nuts, Crushed candy bars, graham cracker crumbs, marshmallows, crushed pretzels, dried chopped fruit

1. Insert a stick vertically into the center of each apple and set aside on a parchment or wax paper lined cookie tray.

2. In a large enameled cast iron pot, combine butter, sugar, corn syrup and 1 cup of heavy cream. Heat mixture to a boil over medium heat, stirring frequently. Once mixture has reached a boil, stir in thee remaining up of heavy cream.

3. WITHOUT STIRRING and using a candy thermometer- bring the mixture to 239º then immediately remove from heat. (takes about 20-25 minutes)

4. Carefully pour caramel into a narrower and taller saucepan, stir in vanilla. Do not scrape in the brown bits at the bottom of the pan into the saucepan.

5. Allow the caramel to cool 10 minutes before dipping the apples. Work quickly. Place dipped apples on lined tray and refrigerate till set.

These are Massiel's favorite. I used to make them all the time and this recipe produces the perfect caramel for apples. Sooooo good!
