1 lb. hot Italian sausage
1 lb. sweet or mild Italian sausage
1-2 packages block mozzarella cheese (shredded is fine, too)
2 loaves pizza dough (fresh or frozen) or frozen bread loaves

VARIATIONS: Saute peppers and onions, add a little spaghetti sauce and Parmesan cheese. This can be in addition to the sausage but be careful not to over stuff. Use garlic pizza dough for a stronger flavor or different cheese combinations for zest!

Shred cheese and set aside. Cook loose sausage separately or mix together if you prefer. Break up any large chunks. Drain sausage and save the drippings to brush on bread before baking. Roll out dough as you would if making pizza. Don't knead dough too much and do not roll too thin. Crumble a cup or so of sausage and spread from the middle back towards you. Spread a handful of cheese over the sausage. Be careful not to go too far into the ends.

IMPORTANT: Don't over stuff or you will have a mess!

Roll up and pinch ends. Place on lightly floured baking sheet or baking stone. Brush top lightly with hot sausage grease to brown top. May reapply half way during baking time.

Bake 385- 400º approximately 30-40 minutes.

To reheat: For best results, wrap in foil and warm in oven; slice bread and toast in oven/toaster oven or in microwave but the texture may be a little soft/spongy.

This is a recipe that gets easier with every failed attempt! You can also make a simple dipping sauce by blending virgin olive oil and spices or balsamic or marinara. Have fun and enjoy!
