2 cups cooked white rice - cooled
1/2 cup grated parmesan cheese
3 eggs
8 cubes mozzarella
1 cup Italian bread crumbs
oil for frying
marinara sauce for dipping

Heat oil for frying.

In a large bowl combine rice, parmesan, and one egg. Mix until combined. Place a scoop of rice in the palm of your hand, put a cube of cheese in the middle then close hand and roll into ball shape. Make sure the cheese is completely sealed in the rice. Do this until rice and cheese are gone.

Whisk the 2 remaining eggs in a shallow bowl. Dip the rice ball in the egg mix then in the bread crumbs, shaking off the excess.

When the oil reaches 375º, start frying rice balls in small batches. Fry until golden brown, place on paper towel and salt immediately.
