4 oz butter
8 oz onions (diced)
4 oz celery (diced)
1 tspn paprika
1 gal beef stock
Salt &pepper
5 oz rum
2 oz port
1-1/2 lbs Bayou(Cajun) Turtle
3 oz sherry (optional amount)
2 tblspn flour
Make bouquet with bay leaf, 4 cloves, 2 spites thyme & 6 sprigs parsley

Directions:
Directions:
Sauté the onions and celery in butter.
Add turtle (diced), fry 10 min and add 3 oz rum. Light rum and let burn.
Add sherry, paprika and flour. Mix well.
Add beef stock and bouquet and season with salt & pepper.
Bring to boil and let simmer for 2 hours.
Remove bouquet and add 1 tblspn Worcestershire, 2 more oz rum and season to taste.
Serve in bowl and top with parsley.
