4 cups potatoes - sliced thin
3 tbsp butter
3 tbsp flour
1 1/2 cups milk
1 tsp salt
dash of cayenne pepper
1 cup shredded sharp cheese
'1/2 cup shredded sharp cheese for the top
paprika

Directions:
Directions:
Preheat oven to 350º. In a small saucepan melt butter and add flour stirring to make a roux. Cook this for about 2 or 3 minutes to get rid of the flour taste. It is best if its a golden color. Add the milk gradually, stirring or whisking the whole time. Season with salt and cayenne, bring to a boil, reduce heat and cook until thickened. Stir in the 1 cup of cheese.

Place half the potatoes on the bottom of a buttered baking dish. Pour 1/2 of the cheese mixture over this. Add the remaining cheese sauce, sprinkle with the 1/2 cup cheese and dust with paprika.
