5-7 Each Anaheim/Hatch/Pueblo Green Chile - Roasted
2-3 T Flour
¼ C Vegetable oil – DO NOT USE OLIVE OIL
Garlic Salt
Onion Powder
6-8 C Cold Water
1 Can Diced Tomatoes

Directions:
Remove skin and stem from roasted chile – membranes and seeds contain heat so they can be removed if desired. Chop and set aside.

Add flour to skillet at medium temperature, stirring constantly. When flour starts to brown, add vegetale oil(1 ½ T lard can be substituted) creating a rouz-type mixture.

Add chopped chile to roux, stir. Add cold water, stir.

Add tomatoes, garlic salt and onion powder. Cover and simmer for 20 minutes.

OPTIONAL: BROWN DICED PORK ROAST, THEN ADD FLOUR AND COAT MEAT COMPLETELY. ADD OIL OR LARD. PROCEED WITH STEP 3.
