Ingredients: 1 lb. Lean Ground Beef 1 Small Onion- chopped 3 c Colby Longhorn Cheese- shredded 1 pkg Corn Tortillas Red Chile 4 c Lettuce- chopped 1 Tomato - chopped

Directions: |
Directions:Brown ground beef, drain, set aside.
Dip corn tortilla in red chilé and place in baking pad. Add 2 T ground beef to corn tortilla, sprinkle a little onion and cheese. Roll up tortilla and place in corner. Repeat with remaining tortillas. Sprinkle remaining cheese on top of rolled tortillas and place in 350º oven for 10 minutes or until cheese is melted.
Plate 2 enchiladas and smother with red chilé. Garnish with chopped lettuce and tomato on side. |

Ingredients: 2-3 T Flour 2-3 T Red Chile Powder ¼ C Vegetable Oil – DO NOT USE OLIVE OIL (Lard preferred) 1 ½ T Garlic Salt 1 T Onion Powder

Directions: |
Directions:Add flour to skillet at medium temperature, stirring constantly. When flour starts to brown, add vegetable oil (Lard can be substituted) creating a roux-type mixture. Add chile powder to flour/oil. Stir until all powder is mixed. Add 4 cups of cold water, stirring constantly. Season w/garlic salt and onion powder. Add 2 beef boullion cubes, cover and simmer for 20 minutes, stirring occasionally.
