4 or 6 Cornish game hens (1 1/2 lbs each)
1 (12 oz) jar apricot preserves
1/2 cup water

1 2/3 cup celery, chopped
1/2 cup onion, chopped
1/2 cup butter or margarine
2 lg red baking apples, chopped
1 cup pecans, chopped
1 1/2 tsp poultry seasoning
1 tsp salt
1/4 tsp pepper
10 cups soft bread cubes
1 to 1 1/2 cups chicken broth

Prepare stuffing first in Dutch oven, by cooking celery and onions in butter until tender.
Stir in apples, pecans and seasonings. Remove from heat and stir in bread cubes. Pour broth
over bread mixture and toss to moisten.

Then prepare game hens by removing giblets and patting hens dry. Sprinkle body cavities with salt.
Lightly stuff each hen with about a cup of stuffing. Tie legs together with string. Place game hens
in a 10 X 15" baking pan.

In a small sauce pan, combine apricot preserves and water and bring to a boil, stirring constantly, remove from heat.
Bake hens at 350 F for 1 1/2 to 2 hours or until tender. During last 1/2 hour of baking, baste hens
frequently with apricot glaze. Drizzle hens and/or stuffing with left over glaze.
