1 lb 7 ¼ oz bread flour
0.33 oz instant yeast
0.87 oz salt
10 fl oz warm water
2 ¾ fl oz olive oil
2 ¾ oz unsalted butter (softened)
Olive oil as needed
kosher salt (can use sesame seeds or chopped fresh herbs, optional) as needed

Directions:

Combine the flour, yeast, salt, water, oil and butter in the bowl of a mixer fitted with a dough hook. Mix on low speed to blend the ingredients. Increase the speed to medium and knead the dough until it is smooth but firm and fully developed and the temperature reaches 75ºF, approximately 6-8 minutes.

Remove the dough from the bowl. Cover and proof in a greased bowl.

Punch down the dough. Cover and rest 15 minutes.

Roll the dough out ¼ inch thick into a rectangle. Cut the dough into ¼ inch strips.

Roll each strip lightly. Position the strips spaced ½ inch apart on paper-lined sheet pans.

Proof again.

Brush the dough lightly with olive oil and sprinkle with salt, sesame seeds and/or herbs if desired.

Bake at 375ºF until golden brown, 10-12 minutes.
