12 fl oz warm water
1 ¼ fl oz nonfat dry milk
1 oz sugar
2 tsp salt
½ oz dry active yeast
1 lb 8 oz bread flour
1 oz unsalted butter
2 eggs

Directions:
Directions:
Combine the water, powered milk, sugar, salt, yeast and 12 oz flour. Blend well. Add the butter and eggs and beat for 2 minutes.

Stir in the remaining flour, 2 oz at a time. Knead until the dough is smooth and elastic, approximately 8 minutes.

Place the dough in a lightly greased bowl, cover and proof till doubled in size.

Shape into loaves, pan and proof again.

Bake at 400ºF if free-form or small loaves; bake at 375ºF if larger loaves. Bake until brown and hollow sounding, approximately 35 minutes for small loaves and 50 minutes for large loaves.

Variation: Whole -Wheat Bread----Substitute up to 12 oz whole-wheat flour for the equal amount of the bread flour.
