2 lbs cooked shrimp, peeled and deveined (save stock)
1 Tbsp crushed garlic
cup finely chopped red onion
cup fresh chopped cilantro
1 cups V-8
1 cup shrimp stock
cup catsup
cup fresh lime juice
1 tsp hot pepper sauce
cup horseradish
1 ripe avocado
salt

Directions:
Directions:
Boil the shrimp in salted water for about 5 minutes
When you strain the shrimp, save the stock
Peel and devein the shrimp, cut in half to make smaller pieces
In a bowl place the shrimp, onions, cilantro, and garlic
In a large measuring cup mix together the V-8, shrimp stock, lime juice, pepper, horseradish and salt to taste
Pour the mixture over the shrimp in bowl, add avocado (chopped)
Serve in cups or bowls, eat like a soup, with crackers

This soup/cocktail is so delicious. It has tons of flavor and is extremely satisfying even though it's very low in calories. Great on a hot day when cooking sounds terrible. You can buy cooked shrimp and a bottle of clam juice to take the place of the shrimp stock. It's all good.
