1 c. Unsalted Butter
2 c. Granulated Sugar
4 Large Eggs beaten
2 tsp. Vanilla Extract or 1 tsp paste
3 ½ c. All Purpose Flour
1 tsp salt
2 tsp baking soda
3 c Mashed Bananas
1 c. Full Fat Sour Cream

Directions:

Preheat oven to 350º. Sift all dry ingredients into a separate bowl together. In second bowl cream together butter, eggs, sugar, and vanilla. Mix the dry ingredients into wet batter a little at a time until all is incorporated. Batter will be lumpy and thick. Add mashed bananas and mix well. Using a spatula or spoon gently fold in sour cream. Bake at 350º for 1 hour in greased loaf pans.
