1 lb carrots, peeled and coarsely chopped
1/2 cup margarine
1 tsp vanilla
3 eggs
3 tbsp flour
1 tsp baking powder
1/2 tsp salt
3/4 c. white granulated sugar

Directions:
Directions:
Preheat oven to 350 and lightly grease a 2-quart casserole dish. Bring large pot of salted water to a boil. Add carrots and cook until tender (about 15-20 min). Drain and mash, then stir in margarine, vanilla, and eggs. Mix well. Sift together flour, baking powder, salt and sugar. Stir into carrot mixture and blend until smooth, then transfer to prepared casserole dish and bake for 45 minutes.
