1 lb. hamburger meat 1 can of black beans, drained 1 pkg taco seasoning 3 c. cooked quinoa (prepare according to directions – it’s like rice) 1 bag of tortilla chips 1 to 2 c. grated cheese (to your preference)
Brown hamburger and add beans, then mix in taco seasoning and the cooked quinoa. Place tortilla chips on a cookie sheet and spread meat mixture on chips, then add lots of grated cheese. Bake in oven at 400º for about 20 minutes.
