"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
Mix together the cream cheese and peppermint, gradually adding the powdered sugar, stirring until mixture is smooth. Knead in the last of the powdered sugar with your hands. Add food coloring, if desired. Knead until food coloring is evenly distributed.

Form cream cheese mixture into 3/4 inch balls and roll each ball in granulated sugar before placing on wax paper. Flatten each ball with the tines of a fork. Alternately, sprinkle candy molds with granulated sugar and press cream cheese mixture into molds before removing from molds. Store in tightly covered container in the refrigerator or up to one month in the freezer.

Personal Notes:
Personal Notes:
These Mints are a family recipe of Molly McNamara's and were made for her wedding, marrying Christopher McNamara, Terry's brother. After the wedding, a handful of mints were found in Porfi's pocket. Not sure how they got there, he said, but reports happy to save for later....with a wink and a smile.
