3 eggs
2 c. sugar
1 c. vegetable oil or canola oil
4 c. freshly grated zucchini
2 tsp vanilla extract
3 c. plus 3 tbsp. flour
1 tsp cinnamon
tsp baking powder
1 tsp baking soda
1 tsp salt
1 c. chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 375, grease bread loaf pans (3 medium loafs or 2 large loaf pans), and mix all the ingredients together until well combined. Pour into bread loaf pans evenly. Bake at 375 for 40-50 minutes with time varying depending on oven: insert toothpick to made sure bread is done. You can grate and freeze zucchini ahead of time and freeze; if you use frozen grated zucchini, it will measure out to 2 cups if you freeze 4 cups of fresh grated zucchini.
