2 lb. pork (i.e. pork loin roast), cubed
1 large can tomatoes
3 medium potatoes, peeled and cubed
4 tbsp. oregano
2 tbsp. garlic (minced or powder)
2 tbsp. oil

Directions:
Directions:
Blend can of tomatoes, oregano, and garlic in blender. In a skillet, brown pork in a little oil and then add blended tomato liquid and cubed potatoes and let simmer until potatoes are done. Liquid will evaporate to a thick consistency. Eat with flour tortillas or use for a filling for tacos.
