2 CUPS APPLE CIDER

2 TEASPOONS CINNAMON

1 TEASPOON GROUND CLOVES

1/2 TEASPOON GROUND ALLSPICE

SUGAR OR HONEY TO TASTE

1/2 TEASPOON GRATED NUTMEG

CUT & QUARTER APPLES. DO NOT PEEL OR SEED. COMBINE WITH CIDER IN ENAMEL OR STEEL PAN/POT. BRING CIDER TO A BOIL, THEN REDUCE HEAT TO LOWEST POINT, AND COVER. SIMMER THE APPLES STIRRING OCCASIONALLY FOR ABOUT 25 MINUTES, OR UNTIL SOFT. REMOVE FROM POT AND PUT THROUGH SIEVE. MEASURE PULP & TRANSFER TO 6-8 QUART CASSEROLE OR HEAVY SAUCE PAN. (RECIPE CALLS FOR 1/2 CUP OF SUGAR TO EVERY CUP OF PULP, BUT PAT SAYS THIS IS TOO SWEET. SHE USES HONEY. ABOUT A CUP OF HONEY TO TASTE). ADD ALL SPICES.

STIRRING OCCASIONALLY, COOK OVER MEDIUM HEAT FOR ABOUT FOUR HOURS, OR UNTIL A TABLESPOON OF APPLE BUTTER WILL STICK TO A SAUCER WHEN TURNED UPSIDE DOWN. LADLE INTO STERILIZED JARS, AND COVER TIGHTLY.
