2 c mashed potatoes (without milk)
2 eggs

Directions:
Mix potatoes, seasonings, and beaten eggs. Drop the mixture from a spoon into the hot fat (375º - 390º) and fry until golden brown, (2-3 minutes) then drain on brown paper and serve with a garnish of parsley. If the spoon is dipped into boiling water after every using, each drop will retain the shape of the spoon.
