1 c all purpose flour
1/2 c unsweetened cocoa powder
1 t
p salt
1 1/2 c packed brown sugar
3 eggs
4 tsp instant espresso powder (optional)
4 Tbsp unsalted butter
4 oz unsweetened chocolate chopped
1/2 c sugar
1/2 c confectioners sugar

Directions:
Adjust oven rack to center of oven. Preheat to 325º. Line 2 baking sheets with parchment paper. Whisk flour, cocoa, baking powder and soda and salt together in bowl. In another bowl whisk brown sugar, eggs, espresso powder (if using) and vanilla. Combine chocolate pieces and butter in microwave safe bowl. Microwave at 50% power 2-3 minutes stirring occasionally until melted.
Whisk chocolate mixture into egg mixture until combined. Fold in flour until no dry streaks remain. Let dough sit at room temperature for 10 minutes.
Place sugar and confectioners sugar in small bowl. Working with 2 Tbsp of dough at a time roll into balls. Drop balls into sugar mixture and roll to coat. Transfer to prepared cookie sheets. Bake 1 sheet at a time until puffed and cracked and edges have begun to set but center is still soft (cookies will look raw between cracks and seem underdone) about 12 minutes. Rotate sheet in oven halfway through baking time. Let cool completely on cookie sheet.
