Orange Italian Cream Cake Recipe

1/2 cup butter
1/2 cup shortening
2 cups sugar
5 large eggs, separated
1 tbs vanilla
2 cups all purpose flour
1 tsp baking soda
1 cup buttermilk
1 cup sweetened flaked coconut
Fresh Orange Curd
Cream Cheese Frosting
1/2 cup coconut toasted

Beat butter and shortened until fluffy
Gradually add sugar, beating well.
Add egg yokes, one at a time, beating until blended after each addition. Add vanilla
Combine flour and soda, add to sugar mixture alternating with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in 1 cup coconut.

Beat egg writes until stiff peaks form, fold into batter and pour in 3 greased and floured 9 in pans.

Bake at 350 for 25 min. Cool in pans on wire racks 10 min, remove from pans and cool completely.

Orange Curd

Makes 3 cups

1 cup sugar
1/4 cup cornstarch
2 cups fresh or reconstitute orange juice
3 large eggs, lightly beaten
1/4 cup butter
1 tbs grated orange rind

Combine sugar and cornstarch in pan, gradually whisk in orange juice. Whisk in eggs. Bring to a boil (5-6 min) over medium heat, whisking constantly.

Cook, whisking constantly 1-2 minutes until a pudding like thickness. Remove from heat and whisk in butter and grated orange rind. Cover with plastic wrap directly on the curd and chill 8 hours.
Prep time 10 min

Spread 3/4 chilled orange curd between the layers and spread remaining curd on top of the cake. (The layer on top of the cake will be very thick) May chill 8 hours to help the layers in place and make it easier to spread the frosting


Cream cheese frosting

1 8 oz pkg cream cheese
1/2 cup butter, softened
1 tbs vanilla
1 16 oz pkg powdered sugar
Optional - chopped toasted pecans can be added to frosting

Beat first 3 ingredients at med speed until creamy. Gradually add sugar until blended and smooth.Prep time 10 min

Spread cream cheese frosting on the side of the cake, reserving the remaining frosting for another use. Sprinkle 1/2 cup toasted coconut over the top of the cake.
