Ingredients:  
1 large onion
3 medium potatoes
2 oz. butter
4 cups chicken stock
1/2 cup heavy cream
salt and pepper to taste

Directions:
Directions:
Peel and dice onions and potatoes. Sauté in large pot with butter. Cook for about 10 minutes, covered. Stir occasionally as to not stick or brown onions. Add chicken stock and bring to a boil. Reduce heat and simmer for 20 minutes. Allow to cool then blend until smooth. Stir in cream and season with salt and pepper. Reheat to serve
