PASTRY FOR 2 CRUSTS

1 CUP MAPLE SUGAR OR LIGHT BROWN SUGAR

1 TEASPOON FLOUR

1/2 TEASPOON NUTMEG

2 EGGS

1/2 CUP HEAVY CREAM

Directions:
PREHEAT OVEN TO 425 DEGREES

COMBINE SUGAR WITH FLOUR AND NUTMEG. BEAT EGGS WELL, AND ADD SUGAR MIXTURE. BEAT IN CREAM. POUR INTO PIE PAN, LINED WITH PASTRY. COVER WITH TOP CRUST. PRICK. BAKE 10 MINUTES. REDUCE HEAT TO 350 DEGREES, AND CONTINUE BAKING FOR 20-25 MINUTES.
