1 1/2 tbsp. olive oil
1cup butter
2 tbsp. brown sugar
7 cloves garlic
2 tbsp. fresh rosemary (finely chopped
2 tbsp. fresh thyme (finely chopped)
2 tbsp. salt (approximately) or Season Salt
1 tbsp. pepper
1 tsp. paprika
2 cups beef stock (approximately) add more in pan if needed

Remove roast from refrigerator let sit (2) hours before you start to cook: Preheat oven to 500 degrees. Pat roast with paper towel. In a small bowl mix all herbs, 1 cup butter and 1 1/2 tbsp. of olive oil; rub all the butter and oil on the outside
of the roast. including the herbs. Tie roast with kitchen string. Place roast fat side up and rib bones down. Roast for 15 minutes; lower temp to 325 degrees, base approximately every 30 minutes. Cooking approximately (2 hrs.) let it rest 30
minutes before carving, cover with foil; cut away the strings.



( MAKING GRAVY:) leaving 1/4 cup of fat plus the browned drippings and meat juices in pan on stove top on medium-high heat; scrape all drippings that might stick to pan. When bubbly sprinkle 1/4 cup of flour, stir to incorporate the flour and add 3 to 4 cups of water or stock, salt, pepper and thyme to taste. Slice as thick or thin as you prefer and serve.

A full rack of Prime Rib Beef is 3 to 7 ribs; I cooked a Prime Rib one Christmas and it turned out so good!!
